I bet you're wondering what to eat when you come to Zambia. Well may I offer the following:
KAPENTA!Yes, these tiny little bone infested fish are a staple of the Zambian diet. You have to remember that most Zambians don't have a refrigerator (or even electrical power). This means they need to purchase food that can remain edible unrefrigerated. Kapenta is a dried fish that stays good for about a week. "Good" is a relative term. We serve Kapenta at least twice a week to our construction workers at the village. Yes, I have personally eaten kapenta. I'm not going to lie to you...it's not very good. But if you are hungry you can put it down. The only part I have trouble with is the taste of the eyes...well that and the overall smell.
